The cell structure of the timber is constantly reacting to the environment around it, regardless of if it is coated or not. When it is hot and humid or wet it will grow. When it is cold and dry, or no humidity in the air it will shrink. Even timber on 100yr old buildings is still moving. They are constructed to allow for this movement, and so should your project. All we have done is change its shape. We are not the manufacturer of the wood; we are the manufacture of the timber profile from the wood. Nor can we control the colour. In its rough sawn state, we can’t see what the true colour of the timber underneath is. Add the point that a lot of species change colour when freshly machined, and we will never be able to give you a perfect "set" of timbers. Also keep in mind all timber species slowly change colour once machined. Nothing we can do will change the way the timber will naturally age over time but the right coatings can slow it down.
